Hi there! Is it Summer in your part of the world yet? Are you having a lovely time soaking up the sun, taking dips in the pool or the sea and barbecuing every evening? Things are slightly different here…
After the warmest May in recent history, we have been inundated with thunderstorms every other day, with the temperature resolutely sticking to under 20 C.
The constant rain has helped my garden though. The grass is a verdant lush green, the hydrangea are blooming and cherries have ripened beautifully.
The lavender bushes are thriving and their scent is making me feel like I am in warmer climes like the south of France… or Spain.
Speaking of Spain, I finally visited the gorgeous city of Madrid! It was a work trip and I didn’t have my camera with me, but if you follow me on Instagram, you can see what I was up to there.
It was a warm week there and I was so happy to be away from rain-swept Copenhagen for a change. Four evenings of walking down the sloping, winding, picturesque Calles (streets) of Madrid, with beautiful architecture at every turn.
With the warm sun shining down on us, feasting on some wonderful tapas and experiences in Spanish gourmet dining accompanied by cold, sparkling Cava, it was a trip to remember.
I can’t wait to go back to Spain with the husband and the munchkin. In the meantime, I am recreating some of the magic of Spain with this delicious, heady cocktail.
I brought back three little bottles of Cava from Madrid and made this lovely Lavender Cava Cocktail, with a splash of Blue Curaçao to give it that alluring turquoise hue.
The Lavender syrup is homemade with the lavender from my backyard. It is a ridiculously easy recipe and the syrup can be used to flavor so many drinks and desserts.
This Cocktail is as delectable as it is elegant. Floral, summery and bubbly! I can imagine serving these to guests at a summer wedding; it can even be the ‘Something Blue’ for the bride!

- 4 teaspoons Lavender Syrup (see link to recipe below)
- 4 teaspoons Blue Curaçao
- 400 ml Cava, chilled
- Fresh Lavender flowers, to garnish (optional)
- Add one teaspoon each of the Lavender syrup and the Blue Curaçao to 4 cocktail glasses.
- Top with Cava and give it a stir.
- Add a stalk of lavender to each glass and serve immediately.
