OK, you know all those jokes, jibes and memes about Danish summer? No? Well, I guess you have to be in Denmark to see them appear on your social media channels. Anyway, there are jokes about how the Danish summer is a non-existent concept.
Well, anyway, this year, Summer has struck right back and way earlier too! We’ve just had the hottest May in 12 years!!
It has been 31 C some days and since air-con is more or less an unknown/ mostly unnecessary concept here, it has been stiflingly hot! I have been lying under a tree in my backyard on weekends! Honest!
And guzzling drinks by the gallon! Seriously, it’s been too hot to eat, too hot to barbecue; but just the right weather for cold drinks and chilled treats! Juices, smoothies, popsicles, ice creams, yes please!!
And then there are the grown up treats for just the husband and me! Cold beers for him and fruity cocktails for me (well, he enjoys them too, just in a more manly glass).
I have lost count of the number of pitchers of this lovely, summery, tart-sweet Kiwi Margarita I’ve made in the last few days. So refreshing, so delicious!
And so, so easy to make! It all comes together in a pitcher. Plonk all the ingredients into the pitcher and blend away to glory.
Whoever came up with the idea of the lime and salt rimmed glasses is a genius! They give such a refreshing ‘kick’ to these margaritas, in addition to the tequila, of course!
Now, if you wanted to make this for kids, just leave out the tequila and serve it like a fancy lemonade! It still tastes wonderful. The munchkin has enjoyed the mocktail version quite a lot, licking her lips along the way.
And really, you could use this recipe with any summer fruit or berry and have a fruity, custom-made margarita on your hands. How about a Mango, Peach, Cherry or Pineapple Margarita? Or how about using those divine berries? Can you imagine the glorious hue of a blackberry margarita? So many possibilities! Yum!

- 4 Kiwi, peeled and chopped (replace with any other summer fruit or berry, that has been peeled, pitted, chopped, as needed)
- 3 cups Ice
- 4 Limes, juiced
- 200 ml Silver Tequila
- 1 tablespoon Sugar
- Sea salt for garnish
- Add the kiwi (or other fruit) pieces to a large pitcher.
- Add ice, lime juice, tequila and sugar to the pitcher.
- Blend them together with a stick blender.
- Run the cut side of a lime around the rim of four serving glasses and dip each rim into the sea salt.
- Pour the margarita from the pitcher into the glasses and garnish with a sprinkle of salt on top of each drink.
- Serve immediately.
