You know how as a food blogger you often take upon yourself to make something difficult, really challenge yourself and create something extraordinary…
While these efforts are well appreciated by family and friends, sometimes the food that brings the most smiles and happiness are the simplest ones.
Like these 5-minute chocolate dipped strawberries…
Look at the expression on the munchkin’s face <3
It’s expressions like the one above that makes it all worthwhile
She gobbled up three of these in one go and for once, I didn’t mind. She got one serving of fruit, didn’t she!
These luscious strawberries were dipped in melted white chocolate and then melted dark chocolate before being sprinkled with coconut flakes. Simple, easy, refreshing!
And isn’t there something vaguely Christmas-sy about them? The red, green and white color palette. the coconut that reminds one of freshly fallen snow…
I am bringing these smile-inducers to Angie’s Friday Fiesta. The potluck is being hosted by Elaine and Stacey today and everyone is welcome The variety of food has to be seen to be believed! So come on over
And speaking as I was of challenges at the beginning of this post, I am cooking up something this weekend for the Friday Fiesta Challenge, so stay tuned! Unless disaster strikes, I should have something really scrumptuous to post
Meanwhile, here’s the recipe for the strawberries, though calling it a recipe is a serious stretch 😉
100 grams Dark (cooking) Chocolate
100 grams White (Cooking) Chocolate
50 grams Unsweetened Desiccated Coconut Flakes
Wash and dry the strawberries and thread them on skewers.
Melt the white chocolate and pour into a bowl.
Dip the strawberries and let the chocolate set approximately 2 minutes.
Meanwhile, melt the dark chocolate and pour into a bowl.
Dip the strawberries in the dark chocolate and top with coconut flakes.
Let the chocolate set for a couple of minutes.
